About the Producer/Farm:

Los Hermanos Honey is a collaboration of 3 brothers: Juan Angel and Gabriel Torres, who produce and process the coffee and Frank Torres, who helps with quality control at the farm/processing level.

Juan Angel’s farm, La Cafelina, grows Caturra and Colombia varieties along with various other citrus and fruit trees. Gabriel’s farm, La Indonesia, has 300 square meters of patios for coffee drying, and land to grow coffee and other crops as well.

Processing Los Hermanos Honey:

Once ripe Colombia and Caturra coffee cherries are harvested, they are placed in 60kg Grain Pro bags, where they anaerobically ferment for 30 hours. The bags are kept indoors, avoiding high temperatures or sunlight. This allows for better control over the fermentation process and decreases the occurrence of fermentation defects. The cherries are fermented until a desired sugar content (within the cherry) is reached. Afterwards, the cherries are sorted, de-pulped, and then transferred to open-air, raised beds to dry for 6 days. The coffee is then transferred to shaded patios to dry for another 22 days.
