All coffee is roasted on Sundays and shipped on Mondays. Orders placed after midnight (CST) on Saturdays will be roasted and shipped the following week. Since coffee is perishable, we do not accept returns.

Damo Bensa is sunshine in a cup! This coffee tastes like a citrus orchard and hoppy, candied florals.

Various smallholder farmers bring there ripe coffee cherries to the Damo Washing Station–the washing station either accepts or rejects the cherries based on whether or not they meet quality standards. Accepted cherries then move on to be processed.

Catalyst has implemented special prep protocols(including meticulous cleaning and sorting) at the Damo washing station. One of these protocols is density sorting. The de-pulped coffee cherries are separated by density prior to fermentation. Lower density and “floater” cherries are removed to be processed for community blends when possible. The higher density(more complex, higher acidity) cherries move on to fully-shaded fermentation tanks. The shade canopy limits direct sun exposure and rain pollution from the fermentation tanks. This also slows down fermentation time, producing higher acidity and defined fruit in these coffees.
